Instructions
  1. In bowl of food processor, combine almond flour with ground walnuts and pecans. Pulse several times to mix evenly.
  2. Add dates, vanilla, cacao, cinnamon and salt.
  3. Process until mixture forms sticky dough that holds together when pressed. If too dry add 1 more date or 1 teaspoon warm water. If too sticky add 1-2 tablespoons almond flour.
  4. In small bowl, add shredded coconut.
  5. Scoop about 1 tablespoon mixture and roll into ball. Roll in shredded coconut until fully covered. Place in container.
  6. Refrigerate 15-30 minutes to firm up.
  7. Store in refrigerator up to 1 week. Freeze up to 3 months.
Recipe Notes

Variations:
